Diet Trick - Meat/veggy balls - Gluten Free & Low Carb! Super Delish!! EASY

Diet Trick - Nutritious Meat Balls

These Fabulous meatballs can be made in unlimited amount of flavors.

 The most wonderful thing about them is that your veggies are hidden in the mix.  You barely taste the veggies and you have a wonderful low carb, gluten free, nutritously packed snack.

I make a large batch and freeze them in single use baggies. Each time I make a different flavor.  I use a cake pop pan to bake mine in but a regular cookie sheet will do fine.


A very important ingriediant is Cream of Tarter. When it is mixed with baking soda and water it creates an  effervescence  which in turn keeps the meatballs light and fluffy instead of being compacted and chewy.

The General recipe is very easy, I use about 3 lbs of meat.  I split the meat between at least two differnet kinds of meat.  Like beef and turkey, turkey and pork (asian), beef and lamb and turkey (greek).  There are just two many combos, but I try to keep a fatty with a lean. Then I add approx. 2 cups of finely chopped veggies like spinach, cabbage, carrots, squash, onions, mushrooms, etc.  Believe me, they do not overpower the meat at all. Add some spices and a little liquid not over 1/4 cup and sprinkle with a binder, such as almond flour, oats, coconut flour, flax or chia seed or a combinantion of binders.  Just mix , form into 1 1/2 " balls and bake.  You get a whole meal in the little meatball.  About 6 meatballs and youve had lunch.

Here is a version of my Greek meatballs.  Hamburg and lamb, Spinach, carrots, onions, green onions, kale, parsley, cilantro, garlic, mustard seed, Oregano, Oat flour, Chia seed, splash of red wine vinager and worcester mixed up with feta and parmesan cheeses. Baked - froze - now a pick of ready to nuke to enjoy with a pleasent balsmic dip.

 Next I am making Asian with ground pork, turkey, chinese cabbage etc.... Yum cant wait.

My New DIET is really workin!!! YEEEHA

My New diet I started 4 weeks ago is workin great

 I am down 17 pounds already.!!
What is it? Really its kinda easy.

  •  NO processed food, 
  • Vegetables and meat, eat eat eat! little ditty there.lol! 
  •  No gluten at all for awhile. 
  •  I also exercise twice a day, and all i do is dance dance dance around the house to 70's and 80's rock. 
    •  Like " She's a Brick House", yes I are! 
    • Wild Thing
    • Magic Carpet Ride,
    •  Play that Funky Music. ETC.. Lovin It. 
It is really working, Approximately 4 pounds a week.  Swimsuit here I come....

I will post the recipes that are helping me the most for al to use.

When I began this a month ago I had just been diagnosed with Diabetes and fatty liver, this is on top of Rheumatoid arthritis, Fibromyalgia, High Blood pressure, high cholesterol, and high triglycerides and just got over Breast Cancer and I weighed in at 202 lbs.

Amazing Flat Bread outta Sweet Potatoes

Here I am bored again with traditional recipes, so I have searched the globe for some tasty new ones to try.  I have found some strange ones tat I would not eat though.... I left them out.. ha ha.  But here are a few ones I am going to try #sweetpotato #flatbread


Sweet Potato Roti or Flatbread

Ingredients

  • 1 large sweet potato, peeled and chopped and cooked
  • About 2 cups of whole grain flour
  • 1 tbsp brown sugar
  • salt to taste
  • 1/2 tsp cardamom powder
Mix together to make a soft dough, separate into small balls, roll each ball out into a flatbread - your can bake or lightly fry in butter.

Gotta mess of Green Beans - Fix em different - Recipes from around the World

Gotta bumper crop of #green beans# coming in and need new ways of fixing them.  Here are recipes that I found around the world .. I will have 2 posts this one includes Russian, French and Indonesian.
I still have Spanish, German, Japanese and a few more..

 Russian Recipes

WOW a new one Green Beans in a sour cream sauce.

Just clean and trim a batch of green beans.  Place in a frying pan with a tad of oil, garlic and onion.  Fry for about 5 min.  Add sour cream, simmer till tender.  Sour cream will condense during simmer. serve hot Yummy

GREEN BEAN CASSEROLE - (unlike Ours)
How to cook green bean casserole. Рецепт блюда запеканка из зеленой фасоли.
  • Green beans 0.5 kg
  • 0.5 kg of ground beef
  •  1 cup rice
  •   onions
  • grated  carrots
  • 2 egg
  •   cream
  •   dill
  •   mint
          Boil the green beans in salted water, drain, wash a bit in very cold water. .
  •  Boil a cup of rice. . Rinse.
  • In a pan fry the onion until transparent and carrots, grated on a coarse grater.. Add salt and pepper to taste.
  • Continue frying and add 200 grams of cream, cook out until thick cream.
  •  In a bowl, mix the minced meat, rice and contents of the frying pan, add the egg and chopped dill.
  • In a greased dish .Add contents of bowl then Carefully insert beans, being careful not to break the pods..  . butter and sprinkle with breadcrumbs.
  • . Bake in the oven at 180 degrees for 40 minutes (casserole needs a little "tan" from above).  Garnish with mint
CRISPY COATED BAKED OR FRIED GREEN BEANS

Coat green beans with flour, egg wash then bread crumbs then fry or bake...
 

 French Recipes

Green Bean Flan

Ingredients
450 gr drained green beans
4 eggs
25 cl whipping cream
Salt, pepper
A pinch of curry
1 teaspoon chopped Basil
 
Preparation
Cut into small pieces drained green beans and set aside in a bowlIn the bowl of a mixer, pour the cream whipping and 4 eggs. Add the green beans, cut into pieces.
Mixer for the first time until Homogen. and bake



 Green beans with horseradish omelet
Omelette de haricots verts au raifort
 
 Easy
For 4 persons: 200 g of green beans
1 onion
150 g of grated Gruyère cheese
6 eggs
75 ml of fresh cream
2 teaspoons of grated horseradish
salt, pepper
parsley
1 In a skillet, sweat the onion until
It is translucent, then add the beans and cook for a few minutes over medium heat.
Green beans with horseradish omelet: step 22Battre the eggs with the cream, parsley and horseradish. Pour over beans and cook over medium heat about 10 minutes. Add the cheese, let it melt and serve hot. Salt and pepper according to taste.


Gratin green beans

recette - gratinée de haricots verts

800 g to 1 kg of green beans,
3 teaspoons of butter,
2 egg yolks,
50 cl of milk,
4 tablespoons of flour
4 tablespoons of breadcrumbs
Salt & pepper.

Heat a large pot of water and cook beans 30 min.
Meanwhile, prepare the white sauceMake heat 50 cl milk over medium heat.
Mix in a large bowl 4 tablespoons flour and 3 tablespoon of water.
add a small ladle of hot milk in a bowl, mix, then pour the contents of the bowl to the saucepan.
Immediately reduce heat and turn constantly for 3 to 4 minutes until the sauce is thick.
add Salt, pepper.
Turn the oven (approx. 220 °)
Drain the green beans when they are cookedPut them in the bowl of the mixer to puree them. Add the white sauce to this puree and mix.
Break 2 eggs by separating the whites from the yolksAdd the yolks to mashed beans, mixing thoroughly.
Butter a gratin dish of 20cm x 18 cm with a teaspoon of butterPour in the preparationSprinkle 4 teaspoon breadcrumbs
 

INDONESIAN RECIPES


GREEN BEAN PEANUT BRITTLE




Ingredients:
  • 250 grams of green beans, washed, boiled briefly (not through broken skin), drained
  • 5 cloves garlic
  • 5 lime leaves
  • 1 tsp coriander roasted mashed
  • 1 / 2 tsp cumin roasted mashed
  • 7 hazelnut
  • 1 egg
  • 300 g of rice flour
  • 150 gram tapioca flour
  • 1 / 2 finger turmeric if desired
  • 250 ml of water (adjust viscosity enhancements are required)
  • salt to taste
  • 1 liter of cooking oil
How to Make:  spice puree-2, except lime leaves
  • mixed spices and beaten egg, put in a mixture of tapioca flour and rice flour,
  • salt to taste, put water, stir,
  • enter the lime leaves, stir, set aside

Proof the Tomato / Potato cause Muscle n joint pain in RA and FM = RAF

Just Put down that Tomato, Potato, and Pepper for about 3 weeks.  Then try it again, you may find that your body will feel like you got hit by a truck, just ache all over, even your bones ache.  Feels like you have come down with the flu but you don't have an upset stomach. 

Yep, nightshades are to blame!  Nightshades have been thought to be poisonous since ancient times.  We evolved to eating them more and more over time, which gave us a tolerance for them.  However, if you stop eating them altogether - get them entirely out of your system - and ingest them again - ooooweeee you will feel the pain.  Try it - let me explain why....

 

What are Nightshades

 
Potatoes, tomatoes, peppers Hot and Sweet Bell, eggplant, belladonna, pimento, cayenne pepper, tomatillos, goji berries and all foods that contain any of these.
 

WHY ARE THEY DANGEROUS...

Because they contain very high levels of certain alkaloids
 
ALKALOIDS Are a natural insect repellent that plants give off to keep from being eaten by animals and insects.  Remember - animal = Human
 
Some of these alkaloids are used in medicines and can be very harmful to people who are sensitive to them.
 
Nightshades contain 4 groups of alkaloids and each of them may be harmful. 
1. The most important is Steroid Alkaloides - SOLANINE -
2. Tropane Alkaloids
3. Indole alkaloids
4. Pyrrolizidine Alkaloids
 
Now lets see what science has to say about them............
 
 
 

SOLANINE

1. It affects our nervous system by stopping and important enzyme "Cholintesterase" It causes widespread pain, spasms, twitching, trembling, brain fog, headaches, rashes, sleepless ness, inflammation of the joints, and systemic inflammation all over your body which leads to an immune disorder and/ or chronic pain. 
2. Here are some scientific definitions ----- 
 
  1. Solanine is a glycoalkaloid poison found in species of the nightshade family, such as the potato and the tomato. It can occur naturally in any part of the plant, including the leaves, fruit, and tubers. Wikipedia
    Formula: C45H73NO15
 
Medical Definition of SOLANINE
: a bitter poisonous crystalline alkaloid C45H72NO15 from several plants (as some potatoes or tomatoes) of the family Solanaceae
 
The Government Medline site explains solanine poisoning as a severe condition.  Resulting from injesting too much solanine.
Poisonous Ingredient
Solanine (very toxic even in small amounts)
Where Found
The poison is found throughout the plant, but especially in green potatoes and new sprouts. Never eat potatoes that are spoiled or green below the skin. Always throw away the sprouts.

TROPANE

 
Tropane Alkaloids are Nicotine - we already know the effects of nicotine on the body - but did you know that the nightshades all contain nicotine also.  So your trusty tater has nicotine - so if you are trying to to quit smoking and still ingesting these - you are going to have a really hard time quitting.
 
 
Belladonna is one of the most toxic plants found in the Eastern Hemisphere.[14] All parts of the plant contain tropane alkaloids.[15] The berries pose the greatest danger to children because they look attractive and have a somewhat sweet taste.[11] The consumption of two to five berries by a human adult is probably lethal.[16][17] The root of the plant is generally the most toxic part, though this can vary from one specimen to another.[18] Ingestion of a single leaf of the plant can be fatal to an adult.[11

INDOLE

OK that should  be enough poison to understand how nightshades may be hurting you.   I tried it.  I have Rheumatoid Arthritis, Fibromyalgia, Osteopenia and Breast cancer survivor.  I eliminated the nightshades from my diet for 2 months and then went out to eat and had a nice helping of hashbrowns with onions - result - two days later I felt like I was hit by a truck.  I could hardly move I got a flair that kept me in tears for two days.  A month later I ate a bowl of chili and the very next day I felt like I had the flu.  I was weak, muscle spasms all over my body and I groaned constantly.  I have not eaten a nightshade since then and have gone off of Prednisone and pain killers.  Simple Tylenol now works for me and it is amazing.  My inflammation markers are now on the charts and amazing of all is that my sed rate is much lower - almost normal.
 
So leaving the Deadly NIghtshades out of your diet  may improve your health dramatically as it did mine.  It is worth a try....

Double duty Portable GreenHouse n Solar Drying House

 
 
 
This is amazing, my old man constructed this.  First it was a created to hold a big square water container on top. Then he decided he would create a backyard tree house out of it for our grandkids.  Well spring planting time came and he incased it in plastic sheets and bent small pvc pipe on the top to create a dome. We have started all of seeds in it and it works great.  It is very easy to move around the yard for mowing or better lite. Next he is going to hang screens inside it and create a vegy solar drying house.  He needs to patent this, it is so versatile.

Fabulous Cabbage dishes - wonderful new ideas to try

Here are some fabulous recipes that I found on a Russian website. I can't wait to try them, they are healthy and I have never heard of them before.  The following one is made of Kohlrabi.  I have never cooked it but grow a lot of it.

These are called cabbage fritters.  Kinda strange but intriguing. Cabbage is a huge cancer fighter, anti inflammatory and so much more - we all need to eat a lot of it.

Gluten Free Pork Tenderloin

I excited to share these yummy pork tenderloins.  They are definately forbidden when you are on a  diet unless of course you follow this high fiber recipe.  I began with pork tenderloin cutlets, and squeezed fresh pinapple juice over them to tenderize.  The pinapple could not be tasted in the finished product.
 
Then I set up a breading station in this order... a bowl of oat flour, a bowl of egg wash, and bowl for the crispy coating of pecan meal, teff flour and flax meal.  To all of these I added adobo and Obay seasonings.
 
After coating each, I fried them in very little olive oil, this was just to set the crust and to prebrown. 
 
Finally I baked them on a cookie sheet in the oven at 350 degrees for 30 min.
they came out thick, crispy and butter tender, everyone in the house loved them.
I served them with creamed cauliflower,  I make it by steaming cauliflower till soft, then drain and put back in pan, I add two tablespoons of millet flour, a tble of butter, salt n pepper, and a drizzle of almond milk - I heat this to a boil and turn off then add parmesan cheese, garlic and basil and stir in  - it is heavenly
